Shaking the bottle is necessary to achieve the desired colour. We mix and blend the paint, but eventually it’ll settle, heavier pigments will sink to the bottom. Make sure to shake the bottle for at least 60 seconds to evenly blend the paint before using.

One of the most northerly distilleries in Scotland, Old Pulteney has been produced in Caithness since 1826. Low key but in the same idiom as Latour with 71% Cabernet Sauvignon. This is a tour de force Pichon Baron.

The palate is medium-bodied, very cohesive and lithe, beautiful balance, Very fine tannins, less opulent than usual, conservative but there is a lot of breeding here. It is a little introverted at first, tightly-wound dark berries, tar and graphite and a touch of autumnal leaves. Firm, but sweet tannins (which suggests ideal maturity) characterize this 2008. Not concentrated and dances across the palate.
A brand of Islay whisky, Finlaggan was launched by the Vintage Malt Whisky Company in 1992 and is sourced from undisclosed distilleries. More rich sweet smoke, Touch of raspberries and strawberries, Mouth coating, Chewy peat and old leather. Delicate palate attack – rather vivacious. The Merlots make their impact here, because they were of such great quality in this vintage, fleshy and supple, giving width to the mid palate. Grilled caramel and liqourice on the nose, plump blackberry and blackcurrant fruits, sinewy tannins with touches of pencil lead and black chocolate.
The reputable chateau who originally managed these casks had filled them three times over with French sweet wine, allowing the oak to mellow and therefore temper its influence in our subsequent spirit. A vibrant herring trade would see casks of silver fish and golden whisky transported around the world from Caithness Harbour. This has a lovely, more restrained nose, blackberry, smoke, touch of cigar box, Very pure. The palate has a chewy entry, good acidity, firm grip with a dense persuasive finish that is First Growth standard. Speyside may be best known for its world-renowned whisky, but the region has far more to offer than a dram of Single Malt.
